idk that's a good question. little stuff like red eye removal, "makeup" / airbrushing out blemishes, removing background junk/people... absolutely.
As far as some of this "reconstruction/restoration" stuff I've seen (so far)... its doing a p-poor job of it. It gets the general gist of the image correct, but the details change so much. clothing, jewelry, hair styles, etc. it still does its own thing. Not to say that won't improve, or you couldn't do it in small parts (see point 1) ... Same goes for colorization/grading/etc. unless it absolutely sticks to the original images.
Full on composite stuff, adding people/objects, I think will be a while, but who knows.
Product photography, also absolutely for a lot of things.
I think really serious/specific stuff will still require "craftsmen" in the field, but that's true of everything.
probably need to update this to "This looks AI" "I can tell by the..."
I think you might see some "real image verification" stuff pop up, which will be more important in the future than ever.
